Casterly Rock Cheddar & Ale Puffs

Golden, savory puffs bursting with sharp cheddar and a hint of ale, these bites are as rich and satisfying as Lannister gold.

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, gently unfold the thawed puff pastry sheet. Sprinkle evenly with grated cheddar cheese, chopped chives, salt, and pepper.
  3. Fold the puff pastry in half, pressing gently to seal. Using a sharp knife or pizza cutter, cut the pastry into 24 small squares or rectangles.
  4. In a small bowl, whisk the beaten egg with the ale (or milk). Brush the tops of the pastry squares with the egg wash.
  5. Arrange the puffs on the prepared baking sheet, leaving some space between them. Bake for 12-15 minutes, or until golden brown and puffed. Serve warm.
