Demerara Daiquiri
This is a beautiful aged rum sour, elevated by the warmth of demerara sugar. It's an ideal candidate for milk punch clarification, as the lime's acidity will interact perfectly with the milk proteins, leaving you with a crystal-clear, subtly rounded elixir.
Ingredients
- 2 oz Aged Rum
- 0.75 oz Fresh Lime Juice
- 0.75 oz Demerara Syrup
Instructions
- Combine aged rum, fresh lime juice, and demerara syrup in a shaker with ice.
- Shake well until thoroughly chilled, about 10-15 seconds.
- Fine strain into a chilled coupe glass.
- Express the oils from a flamed orange peel over the drink and drop it in.
Glassware: Coupe
Garnish: Flamed orange peel
History
A direct descendant of the original Cuban Daiquiri, this version swaps standard simple syrup for demerara, lending a richer, almost caramel-like depth that plays wonderfully with aged rum. The flamed orange peel adds an aromatic twist, making it a touch more sophisticated.
