Dream State
This aged rum flip is a creamy, sweet concoction, lulling you into a false sense of security before the subtle, haunting notes remind you of the dangers of falling into a deep sleep, especially on Elm Street.
Ingredients
- 2 oz Aged rum
- 0.5 oz Demerara syrup
- 1 whole Egg
- 2 dashes Lavender bitters
- Absinthe rinse (optional)
Instructions
- If using, rinse a chilled coupe glass with absinthe, discarding any excess. Set aside.
- Combine aged rum, demerara syrup, whole egg, and lavender bitters in a shaker.
- Perform a 'dry shake' (without ice) for 15-20 seconds to emulsify the egg.
- Add ice to the shaker and shake vigorously for another 15-20 seconds until well-chilled and frothy.
- Double strain into the prepared coupe glass.
