East India No. 2
Technically a member of the Brandy Daisy family, this swap uses Pineapple juice and a dash of spice to create a remarkably sophisticated tropical sip. It's a 'near-miss' because you'll just need some Cognac or Brandy to pull it off.
Ingredients
- 2 oz Cognac
- 0.75 oz Pineapple juice
- 0.25 oz Curaçao
- 1 tsp Raspberry syrup
- 1 dash Angostura bitters
Instructions
- Combine cognac, pineapple juice, curaçao, syrup, and bitters in a shaker with ice.
- Shake well until chilled.
- Strain into a chilled cocktail glass or coupe.
Glassware: Cocktail glass
Garnish: Lemon peel
History
A delicate variation on a 19th-century sour template, this cocktail swaps traditional citrus for the tropical tang of pineapple. The sweetness of raspberry syrup and the vibrant notes of Curaçao complement the Cognac, creating a sophisticated drink that hints at the exotic without resorting to overt tiki tropes.
