Hive Heart Horchata
A creamy, spiced horchata with an unexpectedly vibrant core, perfect for a dark forest or abandoned industrial complex.
Ingredients
- 3 cups White rice
- 10 cups Water (plus more for soaking)
- 3 cups Cane sugar
- 10 oz Hibiscus simple syrup
- 2 Cinnamon sticks
- 2 tbsp Vanilla extract
- 2 cups Whole milk (or oat milk for dairy-free)
- Dragon fruit puree, for layering
Instructions
- Rinse the rice thoroughly.. Soak the rice and cinnamon sticks in 6 cups of water overnight, or for a minimum of 4 hours.. Strain the rice and cinnamon, reserving the soaking water. Blend the soaked rice, cinnamon sticks, 4 cups of fresh water, cane sugar, and vanilla extract until very smooth.. Strain the mixture through a super fine-mesh sieve or nut milk bag, squeezing out all liquid. Discard solids.. Stir in the 2 cups of whole milk (or oat milk).. To serve, fill highball glasses with ice. Pour in the horchata, leaving about an inch of space. Gently drizzle dragon fruit puree down the side of the glass to create a striking 'bleeding' effect that settles at the bottom.. Do not stir. Serve immediately.
