Smoky Bee's Kiss
A luxurious mezcal sour, showcasing the smoky notes of mezcal mellowed by golden honey and bright lemon, with a subtle whisper of chili spice from Ancho Reyes, all crowned with a rich, frothy egg white foam. Just grab an egg white and you're set!
Ingredients
- 2 oz Mezcal
- 0.75 oz Fresh lemon juice
- 0.75 oz Honey syrup
- 0.25 oz Ancho Reyes Rojo
- 1 Egg white
Instructions
- Combine mezcal, fresh lemon juice, honey syrup, Ancho Reyes Rojo, and egg white in a shaker without ice.
- Perform a 'dry shake' (without ice) for 15-20 seconds to emulsify the egg white and create a rich foam.
- Add ice to the shaker and shake vigorously again until well chilled and frothy.
- Double strain into a chilled coupe glass.
- Garnish with a few drops of Angostura bitters artfully swirled on the foam.
