  1. If using egg white, combine bourbon, lime juice, Demerara Syrup, and egg white in a shaker without ice. Dry shake vigorously for 15-20 seconds to emulsify.
  2. Add ice to the shaker and shake again until well-chilled, about 15 seconds.
  3. Double-strain into a chilled Nick & Nora glass or coupe.
  4. Garnish with a few dashes of Angostura bitters on top.
