The Dealer's Negroni

Scaled for 8 servings. This iconic Italian aperitif, equal parts bitter, sweet, and gin-fueled, gets a fiery twist that's sure to impress the table.

  1. Combine gin, Campari, and sweet vermouth in a large mixing pitcher or two standard mixing glasses.
  2. Add plenty of ice and stir vigorously for about 30 seconds, or until well-chilled and properly diluted. Stir in batches if necessary.
  3. Fill 8 rocks glasses with a large ice cube.
  4. Strain the cocktail into the prepared glasses.
  5. For each drink, take a large orange peel, gently warm it with a lighter, then squeeze it over the drink to express the oils, causing them to flame briefly. Drop the flamed peel into the glass.
